Jimmy Burchett Founder / CEO
Jimmy Burchett has made hospitality his life's work. With a strong family background in hotels, restaurants and bars, he heard his calling and began his journey as a kitchen hand for a catering company in 2001. Jimmy focussed his energy back of house in the kitchen to gain as much knowledge of flavour structures, balance and presentation with his culinary creations. Over the next four years, he experienced working & co-ordinating private events as well as maintaining a front of house presence.
In 2005 the fast paced life of a bartender beckoned him. Starting off his new life in hotel bars in Thailand and Indonesia; eventually bringing his expertise back to the land down under.
In 2010 Jimmy made the move to Melbourne where he evolved from a bartender to an industry professional. Jimmy Burchett took over as head bartender in 2015 at the highly esteemed cocktail and wine bar The Ugly Duckling and worked along side award winning cocktail bartender Nick Selvadurai to bring Melbourne the best cocktails in this fine city. He now resides as assistant venue manager to Jack Sotti at the highly regarded Boilermaker House which has Australia's largest whisk(e)y selection.

Adam Bothwell CEO / Human Relations
After moving to Melbourne just over 8 years ago, Adam Bothwell became enthralled by the diversity of the hospitality industry and knew right away it was where his passion lay.
Starting out scrubbing dishes in a side alley café on the infamous Degraves Street, he quickly got more involved in the front of house side of the business.
From a certain eminent, open all hours nightclub on the South side of Melbourne, he then progressed to cocktail bars where he earned his stripes under some of the most respected names in the industry, both locally and internationally. From there, Adam moved on to the management side of the hospitality industry and proceeded to excel at building and pushing his teams of likeminded and extremely talented individual staff members to help sculpt some of the best bartenders in this city.
Adam soon learned that his real skills lay on this path. He then proceeded to take a venue in the heart of Melbourne's CBD from a purely vodka lime & soda affair, to being ranked as one of the top 5 cocktails bars in Australia (Australian Bartender Magazine). From there, Adam strived to make his teams be all that they can be through his knowledge of the industry and skills as a manager.
He is now venue manager of the highly esteemed whisk(e)y and cocktail bar, The Woods Of Windsor on Chapel Street and is the unofficial Melbourne hospitality face of the South-Side.
