Jimmy Burchett has made hospitality his life's work. With a strong family background in hotels, restaurants and bars, he heard his calling and began his journey as a kitchen hand for a catering company in 2001. Jimmy focussed his energy back of house in the kitchen to gain as much knowledge of flavour structures, balance and presentation with his culinary creations. Over the next four years, he experienced working & co-ordinating private events as well as maintaining a front of house presence.
In 2005 the fast paced life of a bartender beckoned him. Starting off his new life in hotel bars in Thailand and Indonesia; eventually bringing his expertise back to the land down under.
In 2010 Jimmy made the move to Melbourne where he evolved from a bartender to an industry professional. Jimmy Burchett took over as head bartender in 2015 at the highly esteemed cocktail and wine bar The Ugly Duckling and worked along side award winning cocktail bartender Nick Selvadurai to bring Melbourne the best cocktails in this fine city. At the beginning of 2017 Jimmy moved on to be the general manager at Boilermaker House which has Australia's largest whisk(e)y collection and a plethora of craft beers on offer.
Jimmy now resides as the bar manager at Lover in Windsor along side head chef Paul Turner creating progressive and mischievous cuisine & libations.
